Ingredients
- 200 g carrots
- 300 g bell peppers
- 150 g cucumber
- 250 g cherry tomatoes
- 200 g red cabbage
- 1 cup quinoa
- 2 avocado
- 1 juiced lemon
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
Instructions
- Cook quinoa according to package instructions.
- Chop the carrots, bell peppers, cucumber, cherry tomatoes, and red cabbage into small pieces.
- Mix the chopped veggies in a bowl.
- Add cooked quinoa to the veggie bowl.
- Drizzle with olive oil, lemon juice, salt, and pepper.
- Gently toss everything together until well combined.
- Slice avocado and add on top of the bowl.
