Ingredients

  • 200 g carrots
  • 300 g bell peppers
  • 150 g cucumber
  • 250 g cherry tomatoes
  • 200 g red cabbage
  • 1 cup quinoa
  • 2 avocado
  • 1 juiced lemon
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Cook quinoa according to package instructions.
  2. Chop the carrots, bell peppers, cucumber, cherry tomatoes, and red cabbage into small pieces.
  3. Mix the chopped veggies in a bowl.
  4. Add cooked quinoa to the veggie bowl.
  5. Drizzle with olive oil, lemon juice, salt, and pepper.
  6. Gently toss everything together until well combined.
  7. Slice avocado and add on top of the bowl.
