Gourmet Rainbow Salad

Ingredients
- 150 g baby spinach
- 200 g cherry tomatoes
- 120 g carrots
- 150 g bell peppers
- 120 g cucumber
- 100 g feta cheese
- 80 g olives
- 1 lemon
- 4 tbsp olive oil
- 1 tsp salt
- 0.5 tsp pepper
Instructions
- Wash and chop the baby spinach on a cutting board.
- Slice the cherry tomatoes in half and grate the carrots.
- Dice the bell peppers and cucumber into small pieces.
- Combine all the vegetables in a mixing bowl.
- Crumble feta cheese and add olives to the bowl.
- Squeeze lemon juice over the salad, drizzle with olive oil, and season with salt and pepper.
- Toss the salad gently to mix all the ingredients well before serving.
