Gourmet Rainbow Salad

Ingredients

  • 150 g baby spinach
  • 200 g cherry tomatoes
  • 120 g carrots
  • 150 g bell peppers
  • 120 g cucumber
  • 100 g feta cheese
  • 80 g olives
  • 1 lemon
  • 4 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp pepper

Instructions

  1. Wash and chop the baby spinach on a cutting board.
  2. Slice the cherry tomatoes in half and grate the carrots.
  3. Dice the bell peppers and cucumber into small pieces.
  4. Combine all the vegetables in a mixing bowl.
  5. Crumble feta cheese and add olives to the bowl.
  6. Squeeze lemon juice over the salad, drizzle with olive oil, and season with salt and pepper.
  7. Toss the salad gently to mix all the ingredients well before serving.
