Summer Berry Galette

Ingredients

  • 200 g all-purpose flour
  • 100 g granulated sugar
  • 0.5 tsp salt
  • 115 g unsalted butter
  • 60 ml ice water
  • 2.5 cups mixed berries (such as strawberries, blueberries, raspberries)
  • 15 g cornstarch
  • 1 egg
  • 1 tbsp turbinado sugar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water and mix until the dough comes together.
  4. Roll out the dough on a floured surface to a 12-inch circle.
  5. Transfer the dough to a baking sheet.
  6. In a separate bowl, toss the berries with cornstarch and sugar.
  7. Arrange the berry mixture in the center of the dough, leaving a border around the edges.
  8. Fold the edges of the dough over the berries.
  9. Brush the crust with beaten egg and sprinkle turbinado sugar on top.
  10. Bake for 30-35 minutes until the crust is golden brown and the berries are bubbly.
  11. Let the galette cool before serving.
