Summer Berry Galette

Ingredients
- 200 g all-purpose flour
- 100 g granulated sugar
- 0.5 tsp salt
- 115 g unsalted butter
- 60 ml ice water
- 2.5 cups mixed berries (such as strawberries, blueberries, raspberries)
- 15 g cornstarch
- 1 egg
- 1 tbsp turbinado sugar
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Gradually add ice water and mix until the dough comes together.
- Roll out the dough on a floured surface to a 12-inch circle.
- Transfer the dough to a baking sheet.
- In a separate bowl, toss the berries with cornstarch and sugar.
- Arrange the berry mixture in the center of the dough, leaving a border around the edges.
- Fold the edges of the dough over the berries.
- Brush the crust with beaten egg and sprinkle turbinado sugar on top.
- Bake for 30-35 minutes until the crust is golden brown and the berries are bubbly.
- Let the galette cool before serving.
