Omega 3 Mexican Bowl

Ingredients

  • 150g cooked quinoa
  • 100g canned black beans, rinsed and drained
  • 50g cherry tomatoes, halved
  • 50g diced avocado
  • 20g chopped fresh cilantro
  • 15g chopped red onion
  • 15g chopped jalapeno pepper
  • 10g lime juice
  • 5g extra virgin olive oil
  • salt and pepper to taste

Instructions

  1. In a bowl, combine the cooked quinoa, black beans, cherry tomatoes, avocado, cilantro, red onion, and jalapeno pepper.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to make the dressing.
  3. Pour the dressing over the quinoa mixture and toss to combine.
  4. Serve immediately and enjoy!
