Ingredients
- 150g cooked quinoa
- 100g canned black beans, rinsed and drained
- 50g cherry tomatoes, halved
- 50g diced avocado
- 20g chopped fresh cilantro
- 15g chopped red onion
- 15g chopped jalapeno pepper
- 10g lime juice
- 5g extra virgin olive oil
- salt and pepper to taste
Instructions
- In a bowl, combine the cooked quinoa, black beans, cherry tomatoes, avocado, cilantro, red onion, and jalapeno pepper.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve immediately and enjoy!
