Simple blender mayonnaise

Ingredients
- 1 cup (240ml) vegetable oil
- 1 large (50g) egg
- 1 tablespoon (15ml) lemon juice
- 1 teaspoon (5g) Dijon mustard
- 1/2 teaspoon (2.5g) salt
- 1/4 teaspoon (1g) sugar
Instructions
- Place the egg, lemon juice, Dijon mustard, salt, and sugar in a blender.
- Blend the ingredients on low speed for 10 seconds.
- While the blender is running, gradually drizzle in the vegetable oil.
- Continue blending until the mixture turns into a thick and creamy mayonnaise, about 1 minute.
- Transfer the mayonnaise to a jar or airtight container and refrigerate until ready to use.
Personal Recipe Notes
Best to use an immersion blender if you have one. Also, DO NOT use a power blender like a NutriBullet… even the low setting will heat up and liquify this recipe.
