Stuffed green peppers with Italian Sausage

Ingredients

  • 5 large green peppers
  • 1 pound (450g) Italian sausage
  • 1/2 cup (80g) diced onion
  • 1/2 cup (75g) diced tomatoes
  • 1/2 cup (60g) shredded mozzarella cheese
  • 1/4 cup (15g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon (5g) dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the green peppers and remove the seeds and membranes.
  3. In a skillet over medium heat, cook the Italian sausage until browned. Remove from heat and drain excess grease.
  4. In the same skillet, sauté the onion and garlic until softened.
  5. Add the diced tomatoes, Italian herbs, salt, and pepper. Cook for an additional 2 minutes.
  6. Combine the cooked Italian sausage with the tomato mixture in the skillet.
  7. Stuff each green pepper with the sausage mixture and place them in a baking dish.
  8. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese on top of the stuffed peppers.
  9. Cover the baking dish with foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the cheese is melted and golden.
  11. Serve hot and enjoy!
