Stuffed green peppers with Italian Sausage

Ingredients
- 5 large green peppers
- 1 pound (450g) Italian sausage
- 1/2 cup (80g) diced onion
- 1/2 cup (75g) diced tomatoes
- 1/2 cup (60g) shredded mozzarella cheese
- 1/4 cup (15g) grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon (5g) dried Italian herbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the green peppers and remove the seeds and membranes.
- In a skillet over medium heat, cook the Italian sausage until browned. Remove from heat and drain excess grease.
- In the same skillet, sauté the onion and garlic until softened.
- Add the diced tomatoes, Italian herbs, salt, and pepper. Cook for an additional 2 minutes.
- Combine the cooked Italian sausage with the tomato mixture in the skillet.
- Stuff each green pepper with the sausage mixture and place them in a baking dish.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese on top of the stuffed peppers.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the cheese is melted and golden.
- Serve hot and enjoy!
