Kale Salad with Balsamic

Ingredients
- 1 bunch (250g) kale, stems removed and leaves torn into bite-sized pieces
- 3 tablespoons (45ml) balsamic vinegar
- 2 tablespoons (30ml) extra virgin olive oil
- 1/2 teaspoon (2.5g) salt
- 1/4 teaspoon (1.25g) black pepper
- 1 pint (300g) cherry tomatoes, halved
- 1/2 cup (75g) crumbled feta cheese
Instructions
- In a large mixing bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper.
- Add kale to the mixing bowl, and use salad tongs to toss and coat the leaves with the dressing.
- Add cherry tomatoes and crumbled feta cheese to the mixing bowl, and toss gently.
- Serve immediately.
