Kale Salad with Balsamic

Ingredients

  • 1 bunch (250g) kale, stems removed and leaves torn into bite-sized pieces
  • 3 tablespoons (45ml) balsamic vinegar
  • 2 tablespoons (30ml) extra virgin olive oil
  • 1/2 teaspoon (2.5g) salt
  • 1/4 teaspoon (1.25g) black pepper
  • 1 pint (300g) cherry tomatoes, halved
  • 1/2 cup (75g) crumbled feta cheese

Instructions

  1. In a large mixing bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper.
  2. Add kale to the mixing bowl, and use salad tongs to toss and coat the leaves with the dressing.
  3. Add cherry tomatoes and crumbled feta cheese to the mixing bowl, and toss gently.
  4. Serve immediately.
