Chicken Ceasar Salad

Ingredients

  • 2 large chicken breasts (approx. 500g)
  • Salt and pepper, to taste
  • 2 heads romaine lettuce, washed and chopped
  • 1/2 cup (50g) grated parmesan cheese
  • 1/2 cup (115g) Caesar salad dressing
  • 1/2 cup (60g) croutons
  • 1 lemon, optional

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat a non-stick pan on medium-high heat, add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Set aside and let cool before slicing into thin strips.
  3. In a large mixing bowl, toss together the chopped romaine lettuce, sliced chicken, grated parmesan cheese, Caesar salad dressing, and croutons until evenly combined.
  4. Serve immediately with a squeeze of fresh lemon juice (optional).
