French onion soup

Ingredients

  • 4 large (1 kg) sweet onions, sliced thinly
  • 3 tbsp (45 ml) unsalted butter
  • 1 tsp (5 ml) dried thyme
  • 1/2 tsp (2.5 ml) salt
  • 4 cups (1 L) beef stock
  • 2 cups (500 ml) water
  • 1 cup (250 ml) dry white wine
  • 4 slices of toasted baguette
  • 1 cup (100 g) Gruyere cheese, shredded

Instructions

  1. Melt the butter in a soup pot over medium heat.
  2. Add the thinly sliced onions and cook, stirring occasionally, until softened and caramelized, about 45 minutes.
  3. Add the thyme and salt and stir to combine.
  4. Add the beef stock, water, and white wine and bring to a simmer.
  5. Simmer for 30 minutes to allow the flavors to develop.
  6. Ladle the soup into oven-safe bowls and top each with a slice of toasted baguette.
  7. Sprinkle the shredded Gruyere cheese over each bowl.
  8. Broil in the oven until the cheese is melted and bubbly, about 3-5 minutes.
  9. Serve hot and enjoy!
