French onion soup

Ingredients
- 4 large (1 kg) sweet onions, sliced thinly
- 3 tbsp (45 ml) unsalted butter
- 1 tsp (5 ml) dried thyme
- 1/2 tsp (2.5 ml) salt
- 4 cups (1 L) beef stock
- 2 cups (500 ml) water
- 1 cup (250 ml) dry white wine
- 4 slices of toasted baguette
- 1 cup (100 g) Gruyere cheese, shredded
Instructions
- Melt the butter in a soup pot over medium heat.
- Add the thinly sliced onions and cook, stirring occasionally, until softened and caramelized, about 45 minutes.
- Add the thyme and salt and stir to combine.
- Add the beef stock, water, and white wine and bring to a simmer.
- Simmer for 30 minutes to allow the flavors to develop.
- Ladle the soup into oven-safe bowls and top each with a slice of toasted baguette.
- Sprinkle the shredded Gruyere cheese over each bowl.
- Broil in the oven until the cheese is melted and bubbly, about 3-5 minutes.
- Serve hot and enjoy!
