Gluten-free dense chocolate cake

Ingredients

  • 1 cup (240g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 1.5 cups (190g) all purpose gluten-free flour
  • 3/4 cup (90g) cocoa powder
  • 1 teaspoon (5g) baking powder
  • 1/2 teaspoon (2g) salt
  • 4 large (200g) eggs
  • 1 teaspoon (5ml) vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch cake pan.
  2. In a saucepan, melt the butter over medium heat. Once melted, remove from heat and allow the butter to cool for a few minutes.
  3. In a mixing bowl, whisk together the granulated sugar, brown rice flour, almond flour, tapioca flour, cocoa powder, baking powder, and salt.
  4. Add the eggs one at a time to the melted butter, stirring after each addition. Stir in the vanilla extract.
  5. Add the dry ingredients to the wet ingredients and stir until well combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake the cake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool completely before slicing and serving.
