- 8 medium (800g) carrots, peeled and sliced into rounds
- 1/2 cup (120ml) freshly squeezed orange juice
- 2 tbsp (30ml) olive oil
- 2 cloves garlic, minced
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the orange juice, olive oil, garlic, salt, and black pepper.
- Add the sliced carrots to the mixing bowl and toss well to coat.
- Spread the coated carrots in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 30-35 minutes, stirring once halfway through, until the carrots are tender and caramelized.
- Serve the roasted carrots hot as a side dish or as a garnish for a salad.
