Roasted carrots marinated in orange juice

Ingredients

  • 8 medium (800g) carrots, peeled and sliced into rounds
  • 1/2 cup (120ml) freshly squeezed orange juice
  • 2 tbsp (30ml) olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the orange juice, olive oil, garlic, salt, and black pepper.
  3. Add the sliced carrots to the mixing bowl and toss well to coat.
  4. Spread the coated carrots in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 30-35 minutes, stirring once halfway through, until the carrots are tender and caramelized.
  6. Serve the roasted carrots hot as a side dish or as a garnish for a salad.
