Lamb Chops, Broccoli, Asperagas

Ingredients

  • 8 lamb chops (approx. 800g)
  • 1 broccoli (approx. 500g), cut into florets
  • 1 bunch asparagus (approx. 250g), trimmed
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 4 garlic cloves, minced
  • 1 tsp dried oregano
  • salt and pepper to taste

Instructions

  1. Preheat a grill pan over medium-high heat.
  2. In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, and salt and pepper to taste.
  3. Add the lamb chops to the mixing bowl, ensuring that they are evenly coated with the marinade. Set aside for 10 minutes to marinate.
  4. Add the broccoli florets and asparagus to the grill pan and cook for 8-10 minutes, or until tender and lightly charred.
  5. Using tongs, remove the vegetables from the grill pan and set aside on a serving platter.
  6. Add the marinated lamb chops to the same grill pan and cook for 3-4 minutes on each side, or until they are seared and cooked to your liking.
  7. Once the lamb chops are done, add them to the serving platter with the grilled broccoli and asparagus.
  8. Serve hot and enjoy!
